Banana Bread (GF, DF, Vegan Friendly, Refined Sugar Free)

Ingredients: 3 ripe bananas (save 1 banana for topping the bread) 3/4 cup (85g) of almond flour 1/4 cup (20g) of coconut flour 3/4 teaspoon baking soda 1/2 teaspoon cinnamon 2 tablespoons coconut oil, melted 1/4 teaspoon of vanilla bean 3 free range, organic eggs 1/4 cup (70g) of sugar free maple syrup or honey 1/2 cup (45g) chopped walnuts (save 1/4 of the walnuts for toppings)

Method: - Preheat the oven to 180 degrees fan forced. - Line a loaf tin with baking paper. - Mix all dry ingredients together in a large bowl.

- Mash 2 bananas & add remaining wet ingredients. - Fold the banana mixture into the dry mixture. - Pour the batter into the lined baking tray, top with 1 banana (sliced in half) & remaining walnuts. - Bake for 45-50 minutes.

Banana bread can be stored in an airtight container for up to 4 days, or portioned up & frozen.
